Thai Cucumber Sauce
1/2 cup sweet Thai chili sauce
1 cup cucumber, chopped
2 Tbsp. roasted, unsalted peanuts, chopped
2 Tbsp. cilantro, chopped
Lime juice to taste
Salt to taste
Combine all the ingredients except the lime juice and salt in a bowl and mix. Taste and check for lime juice. Taste and check for salt.
Our comments: This sauce was recommended with Thai Fish Cakes. We thought the fish cakes were too spicy, but we loved this sauce. Serve it alongside Tartar Sauce with seafood.
