Roasted Cauliflower

1 whole cauliflower

olive oil

Kosher salt

Pepper

2 Tbsp. parsley, chopped

Seasonings Bowl

1 Tbsp. lemon juice

1 Tbsp. capers

1/2 tsp. salt

1/2 tsp. pepper

Pre-heat the oven to 450 degrees.  Set up the Seasonings Bowl.  Cut off the stem of the cauliflower taking care to keep the whole cauliflower in tact.  Place the cauliflower in a baking dish and drizzle olive oil all over, top, bottom and inside.  Sprinkle with salt and put it in the oven until tender and slightly charred (about an hour).  When the cauliflower is done, remove from the oven, give the Seasonings Bowl a stir, and pour ir over the cauliflower.  Sprinkle the parsley on top and serve.

Our comments:  Cauliflower is good ... but it needs help.  The seasonings here are not excessive, but they transform the cauliflower into something special.
