
Grilled Black Cod
1 side of Black Cod
2 Tbsp. vegetable oil
3 Tbsp. sesame seeds, toasted
2 green onions, sliced thin
Oriental Marinade
½ cup Mirin
¾ cup soy sauce
¾ cup sugar
2 cloves garlic
1 tsp. ginger
Oriental Marinade. Combine all the marinade ingredients in a food processor and puree. Pour the puree into a saucepan and cook over medium heat for 10 minutes, stirring often. Cool and refrigerate.
The Fish. Combine the fish and the marinade in a zip-lock bag and marinate for at least 6 hours. Light the grill. Remove the fillets from the marinade and coat each with a little oil. Grill over a hot fire, skin side down until the internal temperature measurs 140 degrees on the edges (leaving the center of the fish a little less done). Garnish each fillet with sesame seeds and green onion slivers and serve.
Our Comments. This is as close as I can get to the black cod at Nobu.
