Parmesan & Balsamic

1/4 lb. chunk Parmigiano-Reggiano

Reggio Emilia balsamic vinegar

Put the parmesan chunk on a serving dish.  Use the point of a broad-bladed knife to break up the chunk of parmesan into small bite-sized hunks.  Drizzle a few drops of balsamic vinegar over each hunk and serve as an appetizer.

Our comments:  Not just any balsamic vinegar will do.  This balsamic vinegar is thick and syrupy and tastes a little like port.  I am sure you can buy it in the States, but I haven’t found it yet.  Order it on the web at www.parmaitaly.com.  The parmesan cheese is special too.  I believe it is the same that you can buy in most good grocery stores.  The cheapest we have found is $11.99/lb. at Jimmy’s located at the corner of Fitzhugh and Bryan.  We ordered some direct from Italy for a side-by-side taste test with the cheese we buy here in the US.  It can be ordered on-line from Italy at the same web site that sells the balsamic vinegar.
