
1 chicken
2 tsp. kosher salt
1 onion, quartered
Seasonings Bowl
¼ cup honey
¼ cup soy sauce
Stir together the Seasonings Bowl ingredients. Put the chicken in a zip-lock bag, pour in the Seasonings Bowl and marinate overnight. Remove the chicken from the zip-lock and put into a clay pot. Let it sit for 15 minutes to let the skin dry slightly. Brush again with the seasonings mixture and sprinkle with salt. Add the onions on top of the chicken. Bake the chicken and onion in a clay pot at 400 degrees for 60 minutes.

Alternatively, roast at 400 degrees for 50 minutes (or until the thigh joint measures 150 degrees) on a rack set within a rimmed baking sheet. If the skin begins to darken too much, cover with a foil tent and keep cooking.
